
Nicolis's Valpolicella Classico is a fruity "everyday red" wine that will pair with just about everything!
Nicolis is one of the few wineries to make a simple Valpolicella, most opt to dry their grapes for a short period to create more structured Superiore wines which are heavier and end up being more similar to the Ripasso wines but we LOVE the freshness of this wines.
The word Classico, if you're wondering, is a name for wines that are made in the historic area of production. In the case of the Valpolicella, this is located to the west of the city of Verona.
Valpolicella is made mainly from the corvina grape, a variety that is light in colour and tannin but high in acidity and bursts with cherry flavours. We love this Valpolicella Classico paired with pasta dishes, pizza and even sushi - especially when it has something spicy or fried in it and the wine is slightly chilled.
