Medici Ermete's Phermento was Alessandro's first project after he entered the winery a couple of years ago. It's young and hip and bubbly - much like its creator! He managed to convince his father and grandfather to go back to the "metodo ancestrale", the traditional method of making Lambrusco to make a dry, sparkling Lambrusco di Sorbara. With the second fermentation happening in the bottle, there is no remuage or degorgement which means that the lees (decomposed yeast), are left in the bottle to add flavour. Don't worry if it looks a little cloudy - it's supposed to!
This is a modern wine, made in a traditional way with a raspberry pink colour we just can't resist...
Great with pizza, pasta, aperitivo and great company.
