Medici Ermete's Phermento was Alessandro's first project after he entered the winery a couple of years ago. He managed to convince his father and grandfather to go back to the "metodo ancestrale", the traditional method of making Lambrusco to make this Lambrusco di Sorbara. The second fermentation happens in the bottle but there is no remuage or degorgement, the lees (decomposed yeast), are left in the bottle to add flavour.
This is a modern wine, made in a traditional way with a raspberry pink colour we just can't resist...
Great with pizza, pasta, aperitivo and great company.
